Who Are We?
Leyla Akçağlılar studied at university in France and had Phd in Business Administration. Having graduated from Paris Cordon Bleu Cooking School, she opened S Restaurant and Cafe chains.She could speak English and French.She passed away in September 2008.
Ebru İpekçi studied Economy and International Trade in USA and worked for Chase Manhattan Bank.She can speak English and French.She has got a daughter.
Leyla Akçağlılar and Ebru İpekçi released their first book named “What Shall We Eat” in 1997.Meanwhile,for the promotion of their cookbook, Ebru İpekçi was writing columns for Sofra and Lezzet magazines.She made life style and gourmet programmes both on and off stage on private TV channels.After releasing their second cookbook “Where and How to Eat” ,they opened Butterfly on 13 December 2003 in Etiler Alkent Shopping Center.In the beginning serving mostly as a patisserie, Butterfly started to produce hand made chocolate in September 2005.Second shop opened in İstinye Park, third shop in Akmerkez. Third book, “Special Tastes from Butterfly ” was published in 2006.
Butterly got Time Out 2008 the Best Patisserie Award and is always number one in the best chocolate brand top ten lists of the newspapers.
Butterfly collection is prepared under the supervision of our advisor Jean-Marc Scribante, international representative of worldly famous Barry-Callebaut chocolate.He is also world chocolate champion.Since the foundation of Butterfly, Mr.Scribante comes here to our office once in every six months ,shares our excitement and gives some new ideas for our collection.The chefs of Butterfly were trained not only by chocolate advisor Jean-Marc Scribante but also by one of the best chefs of the world , famous patisserie chef of Guy Savoy, Hugues Pouget ,who has restaurants under his name and various names in Paris.He has recently opened a new place in Las Vegas. Having awards for after meal desserts , for wedding and celebration cake decorations,Pouget informed the the chefs of Butterfly about cake making and decoration.Having worked at New York Daniel Restaurant for six months between 2007-2008 as desserts chef,Saeko Nemeto has also visited Butterfly.Among the recipes he created, cup cakes and the chocolates with rakı and white chickpeas are the ones attracting the most attention.With the chefs of Butterfly,he also shared his ice-cream making experience that he gained during his studies in the South of France.He’s a chef working with chocolate in the manner of a sculpture.
Six people work at Butterfly plant.Our head chef is Osman Yılmaz.Besides the standart trainings,Osman Yılmaz has worked with the foreign chefs coming to Butterfly.Also twice a year he participates chocolate and cake trainings organized in Belgium,England and France.He’s preparing for the international chocolate competition which is going to be held in 2012.Today he’s the most competent chef in Turkey in terms of world chocolate trends and chocolate know-how. Every year also his team members by turn participate abroad trainings.
Butterfly is a prestigious chocolate brand in world standarts.Butterfly is sure of not only its chocolate collection but also the chocolate cakes.In our stores there is cafe and sales section.The purpose of the cafe is exhibiting all tastes we creat and lead our customers to sales section,retail,which is our primary purpose.
Each product in Butterfly is produced in a highly sterilized environment,without using any additives.Fresh fruits,vegetables and herbs are picked according to the season and latest decorating techniques are applied .Following the world trends,and keeping the customer satisfaction at maximum level to remain number one ,we produce our products.
Butterfly Cakes
The speciality of the Butterfly cakes is that quite few of them are placed on the shopwindow because they are consumed daily,also the chocolate we use is from French-Belgium leader company Callebaut, other ingredients such as butter, milk,cream are the highest quality ones of Turkey.Fruit flavor is never used;all products are made of natural fruits.And the garnish on top is always made of chocolate.
Butterfly cakes must not be considered in the “typical cake” category.Each Butterfly cake is ta pleasure on the palate: taste of the highest quality chocolate.
Butterfly Chocolate
Butterfly uses Callebaut kuvartür, French-Belgium chocolate,which is best selling chocolate in the world in terms of seed quality and high amount of cocoa.
One of the differences between Butterfly and the other chocolate brands is the quality of the chocolate used and the other difference is that Butterfly chocolate is handmade.Handmade chocolate has its master’s imagination,experience,know how and handcraft.

3- “Special Tastes from Butterfly” In this book we collected the recipes that we found out,tried and applied or want to apply since the openning of Butterfly.
